Vanilla Cashew Custard


With Christmas (ie. Christmas pudding) just around the corner, we’ve created a delicious custard recipe for you to drizzle (pour) over your Christmas pud. It’s thick, creamy, rich in flavour and absolutely scrumptious. On the other hand, this is great as an all-year round topping top stewed apples or fruity crumbles.

  • 150g raw cashew nuts

  • 1½ tsp vanilla

  • 275ml water


  1. Soak the cashews in 450ml water for 2-3 hours.

  2. When they’ve soaked, drain the water from them and put them in a blender with 275ml fresh water and vanilla.

  3. Blend until totally smooth and creamy.

Pair it with everything; from Christmas pudding and sticky sponge to stewed apples and granola – especially with our Crunchy Cinnamon Praline Granola recipe.
