Vanilla Cashew Custard

With Christmas (ie. Christmas pudding) just around the corner, we’ve created a delicious custard recipe for you to drizzle (pour) over your Christmas pud. It’s thick, creamy, rich in flavour and absolutely scrumptious.

Ingredients:

  • 150g raw cashew nuts

  • 1½ tsp vanilla

  • 275ml water

Method:

  1. Soak the cashews in 450ml water for 2-3 hours.

  2. When they’ve soaked, drain the water from them and put them in a blender with 275ml fresh water and vanilla.

  3. Blend until totally smooth and creamy.

Pair it with everything; from Christmas pudding and sticky sponge to stewed apples and granola – especially with our Crunchy Cinnamon Praline Granola recipe.
