Sweet Breakfast Omelette

A sweet omelette is our take on a lazy pancake. All you need is, well, eggs.

It's easy to make, versatile and absolutely delicious – plus it’s super rich in natural protein and contains no added sugar.



  • 2 - 3 eggs
  • Coconut oil
  • Optional: nut milk
  • Optional: chopped banana

If you usually have a 2-egg omelette, stick with that. We use 1 whole egg and 2 additional whites but it's all down to personal preference.


1. Beat your eggs together until well-whisked (you can add a dash of milk if desired).
2. Heat ½ a tsp of coconut oil in a small frying pan.
3. Pour in your eggs and spread amongst the pan. Cook one side; flip and cook the other side until it is done to your liking. 

For a banana omelette, add your sliced banana once you've poured the mixture into the pan; cook one side and then fold the omelette to cover the banana.

Now it’s the fun part – top your omelette with mixed roasted nuts, cacao nibs, fresh fruit and a dollop of yoghurt; and douse in nut butter. It genuinely tastes like a pancake but is quicker, easier and still just as delicious!
