Cherry & Coconut Yoghurt Parfait
Yoghurt Parfait is incredibly easy to make and highly delicious. You can add lashings of nut butter in between your favourite toppings and enjoy for breakfast, dessert or as a snack throughout the day.
65g frozen blackberries
65g frozen cherries
6 tbsp natural or coconut yoghurt
2 tsp Indulgent Nut Butter / choice of nut butter
2 tbsp granola or mixed nuts
Add the frozen fruit and 2 tbsp (20ml) hot water to a saucepan and gently heat until gooey.
Whilst this is cooking, start making your layered yoghurt. Spoon 3 tbsp yoghurt into your first bowl; drizzle 1 heaped teaspoon of nut butter on top and add 1 tbsp granola / mixed nuts.
Add the remainder yoghurt.
Sprinkle the final tablespoon of granola or mixed roasted nuts on top; and spoon on the softened fruit and jus.
Finish by adding a teaspoon of nut butter.
If you want to make it sweeter, add a dollop of honey or date syrup and let it melt into the ingredients. Enjoy!
